Homemade Granola Truffles with Peanut Butter

Granola is a breakfast food and snack food consisting of rolled oats, nuts, honey and sometimes rice, which is baked until crispy. During the baking process the mixture is stirred to maintain a loose, breakfast-cereal-type consistency. Dried fruit, particularly raisins or dates, are sometimes also added ( source wikipedia)

I bought almost a year ago a big package of granola for my kid. As for me, its very easy to give her breakfast with oatmeal and milk. So I tried to change to granola. But,badluck she didnt like it.And I have to remove this granola from her breakfast menu.

Myself doesnt really enjoy granola. So this granola end up in the fridge, store in a tight container, sometimes I drop some on my banana bread. But still plenty I have.

Until one day, I was in the mood to make a truffle with peanut butter. I dropped some of granola.,and I cant believe it, its become my kid favourite.





Recipe for Homemade Granola Truffles with Peanut Butter

10 tbsp granola
3 tbsp condensed milk
4 tbsp peanut butter( I love Skippy brand)
10 pieces Marie Biscuits( crushed well until become powder)

Mix well the ingredients, and makes circles.
It goes well with NUTELLA too. 2 tbsp Nutella and 2 tbsp peanut butter.

For 13 circles truffles.

Gemblong

I made gemblong for my tea time today. And posted in Multiply for MFM-18 as the theme is FLOUR.
It wasnt my plan to put my homemade pineapple jam for the gemblong filling.
My plan was to have them with a toast bread, or put on the cookies.
But I dont know why, I just dropped them in my gemblong dough.



Frankly,nothing too much different for the taste. Only a bit weird while eating this sticky gemblong and felt also the sweetness of pinapple.


Well, anyway I enjoyed my unusual gemblong, and surprised to see my picky Jas didnt mind to eat it.




GEMBLONG RECIPE with filling

Step 1

1/2 cup Glutinous Rice Flour
Pinch of salt
2 tbsp of grated coconut
4 tbsp water
Mix them together, and make a shape.

Filling : Pineapple jam

If you want to put the filling, then put them in the middle before make a shape.

And deep fry until golden colour.

Step 2

In other pan, melt the palm sugar..and soon it melted drop the gemblong, mix it until all covered nicely.

Getuk-Coconut Cassava Cake

I miss Indonesia food indeed. This time I imagine getuk in my mouth...
I gave a try to make it and the result well not bad.
Actually, I imagine the getuk which is has red,or brown or soft yellow colour with thin layers and I eat it with grated coconut. But considering about the layers, so I decided to make a simple getuk only.
Anyway it still a getuk.



I only need to steam the cassava and grated coconut( I put a pinch of salt for the coconut). Make sure to steam the cassava till soft enough as we need to mash them.
ANd, prepare sugar its depends how much sweetness u want but getuk is not so sweet,I used brown sugar.

After cassava soft,mash with fork till soft enough for making shape. Mix it with sugar and grated coconut. Make a shape, usually rectangle shape. U can serve it with additional grated coconut and sugar.
