For almost a year, I dont eat any pepes, and I also never know if in Indonesia has pepes ayam??? I only know mushroom pepes, pepes oncom,fish pepes,and tofu. And now talking bout chicken pepes... wawwawww,my imagination about this pepes only hmmm perhaps nice if i put lemon grass, just like Woku Chicken.
I dont have banana leaves,and cant find banana leaves in the market, if theres no rain today, I was thought to go to the park behind this apartment, bring knife,and try to get my banana leaves. Unfortunatelly, rain hasnt stop until now. So alumunium fOil is the option.
Frankly, this is the 1st time ever I make pepes.And of course wondering how its gonna be, so after done with the steaming, let them rest for awhile, took 1 roll for photo session,and try a bit... hmmmm yum. Cant wait to enjoying them,with hot rice and additional chili from Sambal Bajak Kokita.
Recipe for pepes ayam.
1 breast fillet,minced.
4 shallots
2 cloves of garlic
3 lemongrass, crushed,and cut into 8 parts
3 chili paddy
3 bayleaves
6 pieces button mushroom, slice.
2 tbsp oil.
Salt, Pepper
Pinch of turmeric powder (for giving a soft yellow colour)
1/4 tsp coriander powder
1 tbsp cilantro leaves.
Method:
Chopped shallots & garlic,and mix it. Keep half for fry and half to mix with the chicken.
In other bowl, mix minced chicken with salt, pepper,coriander powder,turmeric powder,
half shallots&garlic mixture, 4 parts of lemongrass and cilantro leaves. Keep aside for 20minutes.
In a frying pan, heat the oil, and saute half mixture of shallots,garlic,bayleaves,chili and lemon grass until fragrant.
Drop the saute mixture to the chicken mixture and mix it.
Take foil, or banana leaves, drop the quantity & shapes as u wish. I roll them,and make like candy form.
Steam for 25 minutes.
Enjoy with hot rice and additional sambal ....
