Bread, againnnnnnn

Never bored for bread.
I do miss Bread Talk, Delicious Bakery, Suisse, or Holand Bakery(I love LOng JOhn,still wondering how to make),J-CO and other bakery shops from Jakarta.



Gue jadi inget almarhumah Inong Haris (Dapur BUnda),She´s the one who inspired me to make bread for the 1st time.Si bunda yang tiap hari gue bisa laporan by YM,and left a comment on my story about my 1st bread.
Rest in Peace,Bun. This is my bread picture for the recipe that u share to us.
Ohhh,I have to stop this story before I start to cry.

KBB VI- Cheese Biscuits

Its the time for salty biscuits.
The 6th assignment from Klub Berani Baking.
This biscuits are easy to make, and the most important part is EGGLESS.


I felt that the taste is similar with Kaastengels,only the process is much easier and simpler.


I used Monterey Jack for the cheese,white sesame seeds, and little bit chopped almond&walnuts.
My Jasmita enjoyed these biscuits fresh from the oven.


CHEESE BISCUITS

225g grated mature cheese
125g butter
125g flour
cayenne pepper to taste
sesame seeds

With finger tips, mix together cheese, butter, flour and cayenne pepper until mixture forms a mass. Butter a biscuit tray. Make small balls of the dough. Roll some in sesame seeds and press on tray, placing them fairly far apart as they will spread while cooking. (We have pressed walnuts on some of the biscuits and, for a colour contrast, some chopped pistachio nuts). Bake biscuits in pre-heated oven 180C for 15 minutes. Store in an airtight container

Nutella & strawberries

No bake,no gas, no mixer,no eggs.







Nyummmm.

Vegan-Golden Vanilla Cupcakes

I am amazed with the taste, still cannot believe that this cake made from no eggs.
This is my 1st trial from this vegan book.

My hubby & I, felt this cake was very sweet at the beginning (after sometimes cool from the cooling rack), but after I kept in the fridge and had them for breakfast, the sweetness was ok.



I used margarine instead of oil & for the icing, I used only fresh strawberry & blend them together with butter & icing sugar.

GOLDEN VANILLA CUPCAKES
makes 12 cupcakes

Ingredients

1 cup soy milk - I used natural milk
1 tsp apple cider vinegar - I used normal vinegar
1 1/4 cups all-purpose flour
2 tbsp cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt (increase salt to 1/2 tsp if u´re using oil instead of margarine)
1/2 cup non-hydrogenated margarine, softened,or 1/3 cup canola oil
3/4 cup granulated sugar
2 tsp vanilla extract
1/4 tsp almond extract,or more vanilla extract

Directions

1. Preheat oven to 350F and line muffin pan with cupcake liners
2. Whisk the soy milk and vinegar in a measuring cup and set aside a few minutes to get good and curdled
3. If using margarine : Sift the flour,cornstarch,baking powder & baking soda, salt into a large bowl & mix
4. In a separate large bowl, use a handheld mixer at medium speed to cream margarine & sugar for bout 2 minutes until light & fluffy,but dont beat past two minutes.
Beat in the vanila & other extract,if using, then alternate beating in the soy milk mixture & dry ingredients,stopping to scrap the sides of the bowl a few times.
5. If using oil : Beat together the soy milk mixture,oil,sugar,vanilla, and other extracts, if using, in a large bowl. Sift in the flour, cornstarch,baking powder,soda& salt &mix until no large lumps remain.
6. Fill cupcake liners-two thirds of the way and bake for 20-22 minutes till done.
Transfer to cooling rack & let cool completely before frosting.

Lemon Rice with sauted shrimps & coriander leaves

Ini dia, another nasi favorit kalau lagi buntu masak.
Kenal dengan nasi lemon dikarenakan Mas Jamie di DT&L,sekitar 2 tahun lalu. Semenjak itu, aku senang dengan Jamie, dan sekarang meskipun sudah lama tak bersua, aku masih bisa intip doi disini
Kalau doi, masaknya ditambahkan urat dhal,kalau gue malessss.
Nasi ini cocok dengan kari(seperti Mas Jamie tampilkan), kalau daku nasi ini cocok untuk menu simple vegetarian, atawa menu oseng simple, atawa simple oseng ala India atwa simpel oseng ala gue.

Seingetku, aku telah memodifikasi cara memasak nasi ini dikarenakan kepingin masak cepat. Tak mau aku menggunakan oven untuk nasi dan tak perlu kututup alumunium foil dan menunggu..

Lemon Rice
(Sudah dimodifikasi oleh-ku)

1 1/2 cup Nasi Putih sudah masak
1 Jeruk Lemon ( akan digunakan airnya dan kulitnya)
1/2 tsp mustard seeds
2 lembar bayleaf
2 siung bawang putih
1/2 butir bawang bombay
Chopped coriander leaves (kalau engga pakai juga engga napa,ini menambah flavour azaa)
Salt & pepper
Oil

Panaskan wajan, masukan minyak & panaskan. Setelah itu, masukan mustard seeds sampai meletup-letup, kemudian masukan bayleaf, garlic, onion dan kulit jeruk lemon.Aduk-aduk sampai onion layu.
Masukan nasi,salt & pepper, perasan air jeruk lemon,dan daun cilantro.
Aduk rata.

Sajikan hangat.


Untuk sauted shrimps,


1/2 libra shrimps
2 cloves garlic,chopped
1/4 onion
2 cm ginger, thin slices
5 red chili,thin slices
Coriander leaves, chopped
Salt,pepper for taste
oil
Water

Heat oil, add garlic,ginger & onion.After onion ready, put in shrimps,stir till shrimps cooked.Add red chilies, salt & pepper for taste, and water. Put in chopped coriander leaves. Cooked for 1 minute.
Off gas, serve hot with lemon rice.

Chocolate Chips Sour Cream Cake

Oh my, I almost forgot bout this cake.

I baked it around 1 1/2 month ago when I was craving with lapis surabaya cake but still afraid to try and also was in the kitchen blue, bored indeed with home things,and babysitting.

As multiply-ing and blogger-ing always in my schedule, again I checked my friend Vin´s MP and looking for her lapis surabaya cake, and her others recipe and again I saw this sour cream cake and out of the blue I decided to make the sour cream cake. The chocolate chips image cant out of my mind. Good for me at that time every ingredients was ready in my fridge. I remember its already 6.30 pm and I rushed to the kitchen and baked.

Heaven oh heaven, after cake was ready, a little bit cool, no need to wait too long, I cut it directly and ahhh thanking to the cake I felt much better.
Me & Jas enjoying them so much, 1 row finished directly.

This cake has a light texture, and cant felt the taste of sour cream.

Sweet, light,chocolate. Oh, chocolate again.WHo doesnt love chocolate??????







CHOCOLATE CHIPS SOUR CREAM CAKE
200 gr sour cream
100 gr butter
170 gr icing sugar
2 egg yolks
2 egg whites
1 tsp vanilla
130 gr flour
1/2 tsp baking soda
1 tsp baking powder
Pinch of salt
1 tsp cinnamon powder
150 gr chocolate chips

Method

1. Mix 150 gr sugar, butter, egg yolk, sour cream & vanilla. Beat them till creamy.
2. Mix in flour, baking soda, baking powder & salt. Keep aside
3. Beat egg whites until stiff. Add the egg whites to the no.2, stir well.
4. In other bowl, mix the chocolate chips,cinnamon and little icing sugar.
5. Pour half dough to the baking mold size 20x20x4cm.Put the chocolate chips mixture on top and pour another half dough, and again put the rest of choc.chips.

6. Bake for 30-45minutes, 180C.

Banana-Walnut- Oatmeal- Chocolate Chunk Cookies

This is the richest cookies I had baked. Imagine banana, walnut, oatmeal, and chocolate- who´s not tempting to try them? Dont think about the calories, just think the yummm taste u gonna get.

Got this recipe from Vania. As usual she always put drolling pictures on her blog. Dont compare mine with hers, anyway this cookies totally yippy. I love it.

Enjoying them freshly from oven is one of the best from the overall cookie process.
Its crunchy outside and in the middle little bit chewy.
One thing that have to remember is from this recipe we can make around 3 dozen cookies(first I didnt notice it, until the dough was ready and realized that my pan didnt fit them all), and while waiting they´re set I open her site again and notice the sentence make around 3 dozen cookies.





Recipe

1 cup all- purpose flour
1/2 cup whole wheat flour
1 tsp coarse salt
1/2 tsp baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 1/2 tsp pure vanilla extract
1/2 cup mashed ripe banana (about 1 large)
1 cup old-fashioned rolled oats
8 ounces semisweet chocolate, coarsely chopped into 1/2 inch chunks.(
1/2 cup coarsely chopped wanuts (about 2 ounces), toasted


1. Preheat oven to 375 F. Whisk together both flours, salt and baking soda in a bowl.
2. Put butter and both sugars into the bowl, mix on medium speed until pale and fluffy. Reduce speed to low. Add egg and vanilla; mix until combined.
Mix in banana. Add flour mixture just combined. Stir in oats, chocolate chunks, and walnut.
3. Using a 1 1/2 inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing about 2 inches apart.

Bake cookies, rotating sheets halfway through, until golden brown and just set, 12-13 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to wire racks; let cool completely. Cookies can be stored in airtight containers at room temperature up to 2 days.

Carrot Ka Halwa / Carrot Pudding

Halwa is a dessert made from various kinds of fruits, vegetables, grains and lentils. The ingrdients in Halwa are grated finely and fried in ghee and sugar. Nuts and milk may also be added. Halwas have the consistency of a very thick pudding.




First time I had this halwa when I was visiting my hubby´s auntie in India. She served this halwa as a dessert. Its very tasty and a bit surprised for me to knew that this sweet dish is from carrots.

Here is my carrot ka halwa. I made in a little portion.

2 carrots, grated.
1 cup milk
1 cardamom -crushed
9 tsp sugar
1 tsp butter/oil
Chopped nuts for garnish.

In a pan,pour milk & Carrot. Make them boil then put sugar and cardamom. And stir them,put inside the butter,and keep stirring until milk is dry but not burnt. It takes around 20 minutes.
Transfer to a dish, keep in a fridge. I prefer to have it cold, and put chopped almond,or pistachios while serving.

Roti Keset..




Roti oh roti.


Sebenarnya sih bukan pertama kali gue buat roti, tetapi ini kali bener-bener bikin panik berhubung si roti kok tidak mengembang seperti biasa.

Panik gue, apa yang harus kulakukan? Dibuang, sayang, akhirnya coba panggang aja deh.

Dengan isian seadanya (berhubung udah bad mood takut engga jadi akhirnya isiannya sedikittttt aja) . Coklat meises, keju parut, sour cream mix skm mix kismis. And olesan atas juga asal banget deh.

Masuk oven, 20menitan ada harum roti rrrrrrrrr. Kukeluarkan dari oven, tungguin adem terus kuambil 1 tuk nemenin minum teh, wah ternyata jadi juga si roti. Empuk, manis seperti dulu-dulu dibuat. (mmm atau mungking empuk karena fresh, kalau besok bakalan seperti batu)?

I dont know deh yang penting sekarang dulu gue nikmatin.. kira-kira kenapa tidak ngembang bener ya? Apa karena yeastnya gue engga campurin ke air dulu ?



Recipe-nya

300 gr terigu protein tinggi
200 gr terigu all purpose
125 gr gula
20 gr susu bubuk
17,5 gr ragi instan - nah gue lagi pakai active dry yeast
7,5 gr garam
1 butir telur
135 ml air hangat
70 gr margarin.

Campur terigu,sugar, susu bubuk ragi & garam. Aduk sampai tercampur rata.
Campurkan telur,air , margarin, Ulenin sampai kalis.
Biarkan mengembang 30 menit. Kempiskan adonan.
TImbang masing-masing 40 gr ( gue engga pake timbang, langsung bentuk aza)
Bulatkan, biarkan kira-kira 10 menitan tuk proses pengembangan ke 2. Kempiskan, isi sesuai selera. Bulatkan lagi.
Letakan satu persatu adonan ke loyang bunder diameter 22 cm. Loyang diolesi margarin. Biarkan mengembang lagi 60-90 menit ( gue skip ini)
Olesi permukaan dengan kuning telur ( kutakpakai ini, ku pilih madu & susu)
Masukan oven, panggang 180C, 20 menit.
