Mung Beans Soup

Every Monday I always cook Dal. Whether its a yellow dal, green dal, or anykind of beans.
This food become so familiar to me after married with my hubby.
From food now we know that different country has a different way to cook.
For Indonesian, Mung Beans we prefer to have as sweet dish whether as a filling like Kue khu,makco(no idea the proper way to spell them),Gandasturi,or Mung beans in coconut milk, and even an ice cream.

Lucky me for easily enjoy new food as long as they have a good taste.

So here is my Mung Beans Soup for MFM-16

Toffu-Mushroom Curry

I used Lee Kum Kee curry paste for this dish. Its nice to have this ready made sauce. Helping me a lot while have to cook in a rush.



Always put garlic,ginger, onion and add chili if in the mood for spicy dish.
Mushroom for additional,salt pepper and for me green pepper is the must ingredient for this kind of curry.

No mixer Banana Cupcake

Actually, not in the mood for banana, it was because last tuesday my housekeeper bought 4 bananas instead of coconut. She forgot and thought I want them.And today luckyly I remember I have bananas, if not then tomorrow for sure they all gonna be in the trash.

This is the 2nd time I made this, only this time I reduced sugar to 1/2 cup.

What I like from this recipe is I dont need to use mixer and ofcourse the result, and what I scared about is the words DO NOT OVERMIX.I mix it for 4 or 5 times,hopefully that wasnt overmix.



Recipe:

1 1/2 cup flour
3/4 sugar - used 1/2 cup
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (1 stick) butter, melted
1 1/2 cups mashed bananas - I used 3 large ripe bananas.
2 large eggs - used the medium size
1/2 tsp pure vanila extract.

Method:
Whisk flour, sugar, baking powder, soda & salt
Make a well in the centre of flour
In well, mix together butter, mash banana,eggs &vanilla
Stir to incorporate flour mixture, DO NOT OVERMIX
Pour into the muffin mold.
Bake in 180C till done- around 25 minutes.

Sweet potato in coconut milk

Do you know that sweet potato are rich in complex carbohydrates, dietary fiber, beta carotene (a vitamin A equivalent nutrient), vitamin C, and vitamin B6 ?

And I also heard that a cup of steam mashed sweet potato has 50000 SI betacarotene, which is equal with the total of betacarotene from 23 cups of broccoli.

Wow, its so amazing for me to knows the fact about it. I do love to eat sweet potato occasionally. I remember my mom usually make this sweet dish(Sweet potato in coconut milk) mixing between the yellow and the white one, or sometimes steam it for breakfast. At that time I just ate without knowing the benefits,or concern bout the nutrition.

Here,after live in Panama,become a housewife, has a kid, I change a little bit. Now, I become curios about whats the fact about this veggie,fruits,and always checking the nutritions from the label of packaging everytime I wanna buy something.

Anyway, back to the main point, this is my sweet potato in coconut milk.



The easiest and healthiest dish. Need only to boil 1 1/2 cups of coconut milk,1/2 panela,and 1/2 libra of sweet potato.If pandan leaf is around thats even better.
