Pumpkin Muffin

Wuhuuu Its DELICIOUS!!
Fresh from the oven, 30 minutes after that, I finished 2 of them...
Smell of cinnamon, the softness,the pumpkin taste..all blended together..
What a perfect snacks with my green tea.
ANd while chewing,cant stop thinking whether an additional topping of cream cheese icing or coffee just like ROti Boy ( famous brand of coffee bread in Jakarta),gonna be soooo perfect for them.
Actually its kinda crazy, I had my lunch 1.30 pm, baked this muffin at 3pm, and enjoyed 2 of them at 4pm...





PUMPKIN MUFFIN

1 1/2 cups flour
1 tsp baking powder
1 cup canned pumpkin - I used 3/4 cup only fresh steamed pumpkin, mashed nicely(1/4 lagi buat sup si Bocah)
1/3 cup vegetable oil - I used canola oil
2 eggs
1 tsp pumpkin pie spice - I omit and used cinnamon instead
1 1/4 cup sugar + 1 tbsp sugar - I used 3/4 cup sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon powder
Additonal ingredients from my side : 1/4 tsp clove powder and 1/4 tsp nutmeg powder



Method:

* Preheat oven 350 F
* Put liners in muffin cups
* Whisk together pumpkin, oil, sugar,eggs until smooth.
* In other bowl, shift flour,salt, cinnamon,baking powder and baking soda. ANd fold them into the liquid one. Mix until just combined.
* In other bowl, mix 1 tbsp sugar with 1 tsp cinnamon to sprinkle on the ready to bake batter.
* Pour to the muffin mold, 2/3 full then sprinkle with the mixture of cinnamon& sugar.
* Bake 25-30 minutes

For me , 3/4 cup sugar are perfect, cant imagine if i use 1 1/4 cups gonna be too sweet to eat, as pumpkin has their own sweetness.
ANd for the sprinkle top,thats the cool one... It seems abon sapi/The beef floss on top ahhaha. Really its remind me to ABOn Sapi Cap Ratu..oh boy, wish I could get some package of them,hik....




I love it... Hope you all gonna enjoy this recipe as I do.

This is for 12 standard muffins, and 6 mini for my kid..




Bitter Gourd / Pare in the red sauce

Bitter Gourd/Kerala/ Pare,one of vegetables which is very rare for me to cook.
I started to cooked it when one of my friend,told me that she likes to stir fry bitter gourd with terasi/shrimp paste, so you wont feel the bitter taste from them.
And got another same response from another friend. Since that, I tried to eat them, to get benefits from bitter gourd,(click for wikipedia)




If you want meat inside, just drop whatever you feels wanna eat. Thats the art of cooking, isnt it? For me, to write in a blog is only to share an idea, the rest is depends on the other person whether to following completely or adjusted with the sense of the chef. We are all a chef in the house, arent we?

For this time, I didnt put any meat. I always use LEE KUM KEE CHILI GUILIN PASTE to get spicy flavour, and as chef was in the mood also to taste beans paste / Taoco)
,I dropped 1/2 tbsp only.

Complete recipe:
1 Medium bitter gourd, chopped,remove seeds.
2 cloves garlic, chopped
1/2 onion, cut thin,lengthwise
2 tbsp LEE KUM KEE CHILI GUILIN PASTE
1/2 Tbsp Bean paste
1 tbsp tomato sauce
Water,
Salt, pepper,
Sugar or honey( optional, I used honey 1/2 tsp)
Cashew nuts( optional)
OIl

Heat oil, saute garlic, onion,Drop in chili paste, bean paste and stir in bitter gourd. Add little water, salt, pepper and sugar.

Serve hot, garnish with cashew nuts.

For 1 portion.

Pineapple -Cinnamon eggless cake

 



It is yummy, try this!!
I feel this one also great for Xmas,only need to drop more maraschino cherries.
And its easy to make, no need mixer.

Recipe:

2 1/2 cups flour
200 ml pineapple juice
2 tbsp cinnamon powder
200 ml melted butter, cool it.
2 tsp baking powder
1 tsp baking soda
1 can condensed milk.
1 tsp vanilla essence
Cherries maraschino (optional)

Method:

IN a big bowl,sift flour, baking powder,cinnamon powder, baking soda & baking powder.
Make a well in the middle, add in all the liquid ingredients.
Mix them well, and last, fold in chopped cherry mix well.
Pour in the prepared mold.
Bake in oven 180C, 50 minutes.

French Food- Cheese Souffle-TAsk from KBB 12



Hualo..



Tugas dari KBB kali ini membuat makanan Perancis yang namanya Souffle.

Jujur, daku baru pertama kali ini denger si SOuffle, and baru pertama kali ini juga bikin ini, hasilnya sangat tidak mengecewakan... bocah geu bisa hanya menyisakan sedikitttt souffle dari 1 porsi ramekin doi..

Aku bikin 1 resep dengan 6 ramekin ukuran 4 1/4" hasil buruan Sabtu lalu.

Yang mau coba silakan,lumayan ada menu baru, hasilnya enak dan menurutku tidak terlalu ribet and suseh. Jadi serasa makan apa ya bingung? Dalemnya empuk,lembek, kulit luarnya juga empuk kyk sus ...

Untuk souffle ini, 3 ramekin aku coba masukan red chili flakes on top ,potongan mushroom, dan parsley. Dan 3 lainnya sesuai resep polos saja dengan sedikit parsley.

Gue pribadi lebih seneng yang pake mushroom and red chili flakes... dan pas daku serve itu juga aku tambahin lagi chilinya, krn kepingin pedes

Cheese Souffles
Sumber: The Perfect Cookbook by David Herbert. Penguin Books Australia Ltd 2003.


100g unsalted butter / mentega tawar
� cup plain (all-purpose) flour / tepung terigu
300ml milk / susu
1 cup grated cheddar / cheddar parut - I used 8 slices cheddar ,5 ungrated, 3 grated
2 Tbs / sdM freshly grated parmesan / parmesan parut
� tsp Dijon mustard / mustard Dijon - gue pake mustard biasa
pinch / sejumput cayenne pepper - pake bubuk cabe biasa..
4 eggs / telur, separated / pisahkan


Preheat the oven to 190C (375F, Gas Mark 5). Grease and lightly flour six �-cup-capacity souffle dishes.

Melt butter in a small saucepan over low heat. Add the flour and cook, stirring constantly, for 1 minute. Gradually add the milk and whisk continuously over medium heat until the mixture is smooth, thickens and comes to the boil. Allow to cool for 5 minutes.

Transfer the mixture to a bowl and stir in the cheddar, parmesan, mustard and cayenne pepper. Mix well.

Lightly beat the egg yolks and add these to the cheese mixture. Mix well.
.


With an electric mixer, whisk the egg whites in a clean bowl until firm peaks form. Fold a quarter of the whites through the cheese mixture to slacken it slightly, then gently fold through the remaining whites.( Kelupaan difoto, udah pada kelaparan diluar)


Spoon the mixture into the prepared dishes ( gue nuangnya engga full, jadi ngembangnya ya segitu juga tuh)and bake for 20-25 minutes, or until risen and golden. Don't be tempted to open the oven until the souffles have risen. Serve immediately.

Indian Food- Sai Bhaji- Spinach with Yellow split peas ..

This is a typical Sindhifood.
Its a combination between spinach and yellow split peas( Chana Daal), sometimes people drops chopped potatoes also inside. I usually cook this with pressure cooker to cut the cooking time.

I dont know the meaning of Sai, but Bhaji means a dish. Never know this dish if my hubby is not Indian :),as me & my family not really familiar with kind of lentils except MOong Beans( Kacang Hijau / Moong Daal), Poroto Beans(Red Beans/ Kacang Jogo), and Soya Beans ( Kacang Kedelai).




We enjoy this Sai Bhaji with rice. Its also serves usually with chapati( Indian bread).
Wanna try? Its worth to try, thinking all the nutrition inside.



U only need:
1/2 cup Yellow split peas, wash.
2 3/4 cup water
2 tsp salt
Pinch of turmeric & black pepper
1 green chili
2 cm ginger,chopped
2 cloves garlic, chopped
1 onion ( if the onion is big size, half is enough) chopped.
1 bunch of spinach, removes leaves from stem, and chopped roughly.
If lazy no need to chopped, I also do that..
1 tomato, chopped
1 tsp cumin seeds/ Jeera /Jinten.
4 tbsp oil.

Heat oil.
Fry jeera for awhile and add in garlic,ginger,chili and onion. Fry until fragrant. Add in tomato,fry until tomato soft.
Add in spinach mix it, add in yellow split peas, and water, salt, pepper and turmeric.
Cook with pressure cooker for about 20 minutes, Until the Daal soft.

Serve with rice or chapati.

Peach Cake

So difficult to fight with lazy mood, though everyday I am cleaning my house :)
Like this week,Im so lazy to cook, especially Indian food. My soul wasnt there and affected the food:) poor my Jaan.
Wanna eat manythings yummy, especially spicy food from my hometown or Chinese food, but(sigh)wish someone come and cook it for me..........


Stop talking about my mood, Im trying to updating my blog.
I made this Peach Cake last June, for my friend Cecilia and a daughter of my neighbour.


Love the sponge cake, and the peach.. so fresh to eat.

Recipe:

3/4 cup sugar
3/4 cup flour
4 large eggs
50 gr melted butter( make it cool)
1 can yellow peach in syrup
1 box of heavy cream.

Method:
Prepare 2 molds diameter 8cm, Cover with parchment paper.
Heat the oven, 350F.

Beat eggs together with sugar until it rise, make sure its really rise. As this is a sponge cake. AFter its rise about 7cm from the base, add in flour, mix well. Then, add in melter butter. Mix it well.

Pour in the batter to molds, and bake. I forgot how long..but not longer then 30 minutes.Check with tooth pick inserted to cake. If its clean it means DONE.

Let it cool, and remove the cake from mold.

FOr the icing:

beat the cream until thick,and easy to spread.

Prepare 1 cooled cake, spread the cream on top, and arrage some peach on top, and cover with another cake. Cover them all with cream and decorate as u wish.

Onbitjkoek- KBB 11

Tantangan kali ini membuat kue Onbitjkoek. Jujur baru pertama kali ini juga gue nyobain ini kue. Selama ini hanya pernah mendengar namanya saja. Hasilnya..mmmm enak banget. Wanginya breng--breng..asoy kecium banget wangi rempahnya, karena ada campuran kayu manis, cengkih and pala bubuk. Trus maemnya dengan mentega juga.

Beneran nikmat banget maem ini sambil ngopi liatin luar yang lagi hujan atawa buat makan pagi deh.

Onbitjkoek

125g gula palem/gula merah

5 kuning telur
3 putih telur
campur rata 125g tepung terigu, 1 sdt peres kayumanis bubuk, � sdt pala bubuk, � sdt cengkih bubuk
50g kenari, iris tipis --pake almond.


Kocok kuning telur dan putih telur, gula palem sampai kental dan naik. Masukkan campuran tepung ke dalam kocokan telur, aduk rata. Tuang ke dalam loyang roti (loaf) yang sudah dialas dengan lapisan kertas yang sudah diolesi mentega dan ditaburi tepung. Panggang kurang lebih 20 menit (setengah matang). Taburi irisan kenari. Panggang terus sampai matang, angkat. Potong menurut selera.

Aku baked di 180C, kira 30menitan udah jadi tuh..karna pas 20 menit aja gue udah ampir mateng :)

Lontong ( Rice wrapped in Banana Leaf)

For people who knows how to make lontong, just skip this post.



What is Lontong? Lontong is an Asian dish made of compressed rice that is then cut into small cakes.

Popular in Indonesia and Malaysia, the dish is usually served cold or at room temperature with sauce-based dishes such as gado-gado and salads, although it can be eaten as an accompaniment to other dishes such as Satay and curries. It is also used in Soto as an alternative to vermicelli noodles.

I wanna share how I make Lontong.

1. Find banana leaf.
Clean banana leaf, I wipe them with dumb towel. And cut around 22cm length &width 12cm.
2. Wash rice.
Drop in around 4tbsp. Better use double banana leaf for each lontong as it easy to break.
3. Wrap it tightly, and tighter with cooking thread or toothpick.
I always drops them in a water, just too make them a bit soggy..
4. Cook with press cooker is faster. 30 minutes done. Doesnt have one? Boil it but gonna take more time. 90 minutes
5. After it cooked, take them out,and let them cool by put on the bowl with colader and make them stand.
6. Serve with your favourite dish.

Chicken Tuturuga/ Chicken With Gravy Coconut Sauce (Ayam Opor Manado)



I loveeeeeeeee Manadonese Food, and because of this month theme fromMASAK BARENG YUK now I know that there is another yummy chicken dishes from North Sulawesi, Indonesia besides my favourites Chicken Rica-Rica or Chicken Woku.

I found this recipe, Chicken TUTURAGA from Helga´s site. Please check her site to see the complete recipe.
Well, actually chicken Tuturuga is an opor ayam (Chicken with gravy coconut milk)in Manado, only the differences are they put many kind of leafs and more chili as Manadonese food are mostly spicy.

As I cant find Kaffir Lime Leafs, Pandan Leaf,ANd Lemon Basil leafs here, so I only dropped Lemon Grass as I only need to go to my balcony :)and plug from the pot ...
But luckylyyyyyy I found CHILI RED in the market...wowwww first time in Panama I saw
them, fast I grab them eventhough it was only 10 pieces of them..anyhow Im gonna plant it. Cant wait to make balado2or any rica-rica dishes:) Hopefully they gonna grow well as last time I plant Green Chili but it was fail one...



Anyway, back to Chicken Tuturuga.. and today only I make my Lontong (Rice wrapped in banana leaf). MOrning after kid went to school, I went down and walked through the pedestrian street, 2 minutes walking distance and I grabbed banana leafs from the tree:)



Recipe for Chicken Tuturuga


1 1/2 libra chicken breast fillet
1/2 Red Onion
3 cloves of garlic
3 candle nuts
6 Green Chili padi
3 Red Chili
3cm ginger
1 Lemon Grass,bruised
1/4 tsp turmeric powder
Light coconut milk 250 ml
Thick coconut milk 250 ml
Salt
3 potato small size cut dice.

Method

Wash chicken with lemon and salt.
With mortal & pestle,make paste of ginger,candle nuts,garlic, green&red chili.
In the deep pan, add oil, saute the paste,add in lemon grass, onion. Saute until fragrant,
Put in chicken, saute until chicken 1/2 cook, and pour in the light coconut milk.
Cooked until chicken absorb almost all the milk, and pour in the thick one and potato dice. Add salt.

Serve hot with LONTONG.


I chose this dish as it with coconut milk and imagine the smell of lemon grass and spicy.. hmmmmm
bet it gonna be more wonderful if I have all ingredients.

When Lemon Poppy Seed Cake become a Keylime, Golden raisins & choc.chips cake...

I baked this cake a week ago.
It was a nice cake. Its soft, remind me of my mom marble cake.
I omit the poppy seed and drops golden raisins and chocolate chips instead.
And for lemon, as I dont have in the house, so I used only 1 small key lime..
Thats why I cant feel the taste of lemon :)
I guess I have to change the title into Key Lime Golden Raisins & Chocolate Chips Cake :)
But I love it. Great for breakfast and tea time....





Lemon Poppy Seed Cake

Makes 16 servings
Bake at 350F in large pan for 65 minutes, or in smaller paper pans for 35 minutes.

This cake can be baked in a single large tube pan( I used my new,silicon Wilton tube pan) or in two smaller paper tube pans.


3cups all purpose flour
1 tbsp baking powder
1 tsp salt
1 small jar(1,25 ounces) poppy seeds
1 cup ( 2sticks) unsalted butter,softened ( I used 1 unsalted, 1 salted)
2cups sugar
4 eggs
1/2 tsp vanilla extract
1 1/2 cups milk, blended with 2 tbsp fresh lemon juice (milk may curdle)- I used 1 small Key Lime juice
2 tsp grates fresh lemon peel ( I had to omit this one as my lime didnt work well while peeling...)

Heat oven.
Grease and flour a removable-bottome tube pan, or have two 7 7/8 x 2 3/8 inch paper tube pans ready.
In a medium size bowl, whisk together flour, baking powder , salt & poppy seeds. Set aside

IN a large bowl, beat butter& sugar until fluffy, 2 minutes. Add eggs, one at a time, until incorporated and mixture is smooth. beat in vanilla.
Add half the flour mixture. then milk-lemon juice mixture. Beat on low speed until smooth. Add remaining flour mixture and beat until just blended.
Stir in lemon peel

TRansfer batter to pan(s.until top is dry and lightly browned.
cool cake in pan or wire racek for 15 minutes, then remove large cake from pan (if using)
Leave smaller cake in their paper pans. Cool compeletely

I removed my large cake from pan as said 15 minutes..and down part was break :) perhaps better next time no need to remove anything until cake totally cool.

Banana Cookies

This is also my favourite.
Its so soft,cant believe its a cookie.
Adopted from Simply Recipes,
1st baked without egg.
2nd baked with egg,
and as I dont have ground cloves & nutmeg these 2 ingredients I had to omit.



Recipe for Banana Cookies

1/2 cup of unsalted butter
1 cup sugar ( I used 3/4)
1 egg
1 cup mashed banana ( I used 3 very ripes medium bananas)
1tsp baking soda
2 cups flour
pinch of salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1cup pecans( I used walnuts and chocolate chips 1/2 cup only)

Method :

Preheat oven 350F
Cream butter and sugar together, until light and fluffy
Add egg & continue to beat until mixture is light & fluffy
In a bowl, mix mashed bananas & baking soda let sit for 2 minutes
Mix banana mixture into butter mixture
Mix together the flour, salt, & spices & sift into butter & banana mixture, mix until just combined.
Fold into the batter, pecans(if using). Drop in dollops onto parchment paper line baking sheet. ( I only spread the butter on the pan & dust with flour)
Bake 11-13 minutes or until nicely golden brown.
Let cool on the wire rack.

For 30 cookies

Part 2-One Labour Day

Sooooo, After La Posta, we went back to Multiplaza Mall.
My hubby chose to enjoyed his day off to played in Sheraton Hotel Casino.
In Panama, you could find Casino everywhere. Thats the only entertainment for me & hubby before I have Jasmita. Why? As seeing movie not really attracts me,and clubbing not also my favourite. I guess my time for clubbing is over.

Jasmita loves carousel,everytime we come to MP, she gonna says horse and train.
Meants she wants to ride her horse,she gonna choose the big horse and go around mall with train inside the mall, sometimes I leave her inside train alone, and sometimes I accompany her, somehow when me, hubby nothing to do and bored we all sit together inside the train. 1 person is USD 1, and for Carousel also USD 1.

Back to the main story, As I felt hungry again, so I took Jasmita to enjoyed our afternoon time sat together in this coffee shop. This is the first time I tried, as many times I passed by,and this place always busy,and my tummy cant accept anything else. So today was the perfect time to try..

Jasmita chose Blueberry Cheesecake, and I chose Chocolate Cake which recommended by the waiter there.




When the bill came,the total is USD14. Quite expensive, as I felt the cakes not so heavenly tasty. I wont come again, gonna try another shop which their cakes also attracts my eyes.

End of story.................

One Labour Day...

1st May Labour Day

We went to Panama City, with a new tol road from Colon to Panama City. Its so amazing, from usual trip 1 hour 45 minutes one way to reached Panama, with the new tol road it took only 40 minutes. Could u imagine the happiness here?
I heard the new tol road gonna charge USD 5dolar/way, and additional USD 2,50 dolar(this is the old tol which is connected to the new one).
Goverment giving a 1 month free trial start from last wednesday. Anyone wanna try?:)




Our first stop was Multiplaza Mall. One of the best mall in Panama.
We saw this Superman Bigfoot car, @ the hall, a very nice car, only wondering how to climb inside and drive this car, is a ladder needed? :)






For lunch, I booked @ LA POSTA restaurant, a nice,simply old house and they decorated to be a cozy,intimate restaurant. Reservation is a must. I heard the owner is American.







I ordered this Corvina Fish with white wine cost me USD 14,
It wrapped with a paper, totally wrapped. When a waiter came to served, my question was how to eat this? ANd he politely tear the middle part of the wrapped:)




for my hubby I ordered Risotto Mariscos/ Seafood Risotto cost me USD 16. With this orange colour,its remind me of CAlDO RIKA. Its a Panamanian famous chicken broth, which is giving the food orange colour. I use it very rarely, I am a bit worry about the colour.



Frankly, for this portion, I wasnt happy at all, too small for our tummy,eventhough I like the taste.But not for my hubby, he prefer to go to TGI´s Friday:)

Great,before our meal came,they gave us a welcome bread which is helped our tummy to smile.
