No mixer Banana Cupcake

Adapted from Martha Steward website.
Actually, not in the mood for banana, it was because last tuesday my housekeeper bought 4 bananas instead of coconut. She forgot and thought I want them. And today luckyly I remember I have bananas, if not then tomorrow for sure they all gonna be in the trash.

This is the 2nd time I made this, only this time I reduced sugar to 1/2 cup.

What I like from this recipe is I dont need to use mixer and ofcourse the result, and what I scared about is the words DO NOT OVERMIX.I mix it for 4 or 5 times, hopefully that wasnt overmix.

Recipe:

1 1/2 cup flour
3/4 sugar - used 1/2 cup
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (1 stick) butter, melted
1 1/2 cups mashed bananas - I used 3 large ripe bananas.
2 large eggs - used the medium size
1/2 tsp pure vanila extract.

Method:
Whisk flour, sugar, baking powder, soda & salt
Make a well in the centre of flour
In well, mix together butter, mash banana, eggs &vanilla
Stir to incorporate flour mixture, DO NOT OVERMIX
Pour into the muffin mold.
Bake in 180C till done- around 25 minutes.
